CHICK PEA FRITTERS TO LOVE! ΡΕΒΥΘΟΚΕΦΤΕΔΕΣ ΝΗΣΤΙΣΙΜΟΙ ΚΑΙ ΠΕΝΤΑΝΟΣΤΙΜΟΙ!

Οι νόστιμες συνταγές... γρήγορα φτιάχνονται!
 
Το blog Food Junkie not Junk Food, δε θέλει ιδιαίτερες συστάσεις. Κάθε Έλληνας food blogger, τo γνωρίζει και αν δεν τo γνωρίζει, θα έπρεπε. To μπλόγκ της Food Junkie Ιωάννας, είναι δίγλωσσο (Ελληνικά (σωστά) και Αγγλικά (σωστά)), και γεμάτο νοστιμιές από κάθε γωνιά της Ελλάδας, μέχρι κάθε σημείο του πλανήτη. Είναι αυτό που λέμε ψαγμένο και έχει εύρος, απο τα πιο βασικά και απλά μέχρι τα πιο προχώ και ευρηματικά πιάτα!

Το τριήμερο της Καθαράς Δευτέρας έφτιαξα τους ΡΕΒΥΘΟΚΕΦΤΕΔΕΣ της Food Junkie... Έφτιαξα τη διπλή δόση (παρόλο που δεν τα έβαλα όλα τα υλικά διπλά) και τους συνόδεψα με τη σάλτσα ταχίνι, επίσης απο το μενού με τα νηστίσιμα της ...

Τα τσακίσαμε!



Για να γλυτώσω χρόνο, πήρα έτοιμα αποφλοιωμένα ρεβύθια. Εάν δεν νηστεύετε, μπορείτε προσθέτοντας δυο αυγά χτυπημένα στο μίγμα με τους κεφτέδες σας, να τους κάνετε κλασσικούς ρεβυθοκεφτέδες!



Καλό θα είναι να δοκιμάσετε το αλάτι, πριν προσθέσετε αλεύρι για να τα πλάσετε. Κρίμα είναι να σας βγουν ανάλατα (όπως παρά λίγο να βγουν τα δικά μου...). Επίσης μη βάλετε πολύ αλεύρι. Ισα ίσα να πλάθονται, για να γίνουν αφράτοι. Εγώ δεν τα έκανα στρογγυλά κεφτεδάκια, τους έδωσα φλατ σχήμα, πιο πολύ θυμίζουν μπιφτεκάκια.

Επίσης, έβαλα το μίγμα με τους ρεβυθοκεφτέδες μια ώρα στο ψυγείο και μετά τους έπλασα και τους τηγάνισα. Βοηθάει πολύ στο να μην ''ανοίγουν'' στο τηγάνι.



ΡΕΒΥΘΟΚΕΦΤΕΔΕΣ ΝΗΣΤΙΣΙΜΟΙ
βασισμένοι στην συνταγή της Food Junkie Not Junk Food

Υλικά

500γρ αποφλοιωμένα ρεβίθια
1 ματσάκι μαϊντανό, ψιλοκομμένο
2 κρεμμύδια ψιλοκομμένα
2 σκελίδες σκόρδο,ψιλοκομμένες
3 κ.γ. κύμινο
αλεύρι όσο πάρει για να πλάθονται,
ελαιόλαδο για το τηγάνισμα
αλάτι και πιπέρι κατά βούληση

Εγώ όπως ανέφερα, πείραξα λίγο τις ποσότητες των υλικών γιατί έκανα διπλή δόση. Επίσης, χρησιμοποίησα έτοιμα αποφλοιωμένα ρεβύθια. Για την εκτέλεση και την ορίτζιναλ συνταγή, δείτε εδώ



Σάλτσα ταχίνι

ΥΛΙΚΑ


70μλ ταχίνι (έβαλα λίγο παρά πάνω γιατί την ήθελα πιο πηχτή την σάλτσα)
70μλ νερό
χυμό από 1/2 λεμόνι
1 σκελίδα σκόρδο
αλάτι
πάπρικα (έβαλα μπόλικη!)

Hello friends! How was your weekend? Mine was a bit full... full of gym, full of cooking, full of guests!
This recipe is egg free, which is very importanτ for the Greeks, cause for about one month or until Easter we are on lent. At least for some Greek Orthodox Christians! But if you want to make them not Lenten, just add 2 beaten eggs, and you have the classic CHICK PEA FRITTERS. They are yummy, easy and so quick to make!


I saw this recipe at Food Junkie not Junk food blog,  which is a Greek bilingual blog, with MANY original and classic Greek recipes but also with MANY more from every corner of the world. So if you need to try something special, just ask Ioanna :)
For my chick pea fritters i used almost the double amount of the ingredients (with some small quantity changes). I also bought ready peeled-off chickpeas and i put the chickpeas mixture into the refrigerator for an hour, before i made the balls and fried them. This way it is much easier not to brake the shape of the chick pea fritters when you throw them into the hot oil.



CHICK PEA FRITTERS
based on the recipe by Food Junkie not Junk Food

500g chickpeas (with no skin)
1 bunch of parsley, finely cut
2 red onions, cut in cubes 
2 garlic cloves, finely cut
3 tsp cumin
all purpose flour enough to make a non sticky mixture (don't use too much, just enough that helps you give it shape)
sunflower oil for frying
salt and pepper to taste (taste the mixture before adding the flour)

Method

Put the chickpeas in warm water overnight. Next day boil the chickpeas in salty water until tender. Strain, let them cool and mush the chickpeas. Add all the other ingredients except the flour. Taste for salt and pepper and add more if needed. Put the mixture in the refrigerator for about an hour. Then take the mixture out and add as much flour as needed to make balls. Don't add too much flour, because they will become hard. Add enough just to help making balls. They will stick a bit on your hands but it's fine. Fry the chickpea fritters in sunflower oil at high temperature, until they turn golden brown. Enjoy!





TAHINI SAUCE

Ingredients
1/3 cup raw tahini
1/3 cup cool water
1/2 lemon
1 small garlic clove
some paprika (i used a lot of smoked paprika!)

salt to taste



Method
Put the tahini in a small bowl and pour a little water.
Stir slowly until the texture starts to become thicker, then add more water and stir. Repeat a few times. keeping the mixture more or less homogeneous.
Squeeze and add the lemon juice. Chop the garlic and add the paprika, while stirring. If the tahini is too thick, add a little more water. Add the salt.




Enjoy!

    Και σου γίνανε αφράτοι-αφράτοι!!
    Στους ρεβυθοκεφτέδες ταιριάζει απίστευτα η μαντζουράνα, αν βρεις (εγώ δύσκολα βρίσκω γι αυτό θα πάρω ένα γλαστράκι)βάλε λίγη και θα με θυμηθείς!

  7. My sauce turned out pretty bitter, is that how it's supposed to taste or did I do something wrong? It was also pretty thick, more like a paste than a sauce. I also had trouble getting the mixture to form into balls without adding the two eggs. Any suggestions?

  9. Dear Jeanette, hello.. So sad to hear that the sauce came up bitter. i can't explain exactly the taste, but it is not bitter for sure. It's ok to use the 2 eggs to make the chick pea fritters, but i didn't use any and they came out really good. Maybe try to add some more flour to help it form next time. And as for the paste look like, maybe it needed a bit more water. Paprikas' taste sometime gives a bitter result. Maybe it was a strong paprika, just a guess...   10. Thanks for the help! I tried the sauce again, this time without the paprika and with more lemon juice, and that seems to have helped.
