CHICKPEAS SOUP FROM SIFNOS ISLAND! ΣΙΦΝΕΪΚΗ ΡΕΒΥΘΑΔΑ!







Chickpeas soup from Sifnos Island!This is a specialties of Sifnos Island. Sifnos have one stunning main city – chora – where you can find many celebrities. It’s a quiet Greek island with amazing beaches, but also you can have the time of your life, cause Sifnos By Night, maybe even better than Mykonos by night!
This traditional recipe is very simple to cook. But the result is… more than delicious! The secret is of course good ingredients and the best clay pot. Sifnos residents, have a great reputation that goes back to ancient years, about making clay pots. So they bake chickpeas in any clay pot you can imagine, and serve it in it! I will never forget that humble dish that is by far the best I ever ate.


Ingredients
1 klg chickpeas
1 T baking soda
¾ of klg finely chopped onions (red onions)
¾ of a glass (that we use for drinking water) Olive oil.
Salt and pepper
Water
Lemon

Method
The day before we put chickpeas in water. Next morning, add soda and let sit for 30 min. Rinse them well (3 or 4 times). Put them in a medium clay pot, add onions, olive oil, salt and pepper and water. Water must cover chichpeas when we turn the clay pot and at the same time the water must reach the edge of clay pot and also cover the chickpeas. (Like you are trying to spill out the mixture from the pot. Must cover chickpeas and also reaching the edge of the pot…)
Cover clay pot with the cap and let it cook in low temperature (150 Celsius degrees) for 6 hours! (In Sifnos Island they bake it in wood oven ). You can also make some dough to use it for sealing the cap around the edges.
The result is a delicious thick soup. Add lemon and enjoy your meal with some white cheese (Feta), olives, and warm bread!


ΣΙΦΝΕΪΚΗ ΡΕΒΥΘΑΔΑ!

Πανεύκολη, πεντανόστιμη, θρεπτική, υπέροχη Ρεβυθάδα! Μια συνταγή που γίνεται σε πήλινο αλλά μπορεί να γίνει και σε γάστρα. Επίσης εγώ προσθέτω και λίγη ρίγανη καθώς και ένα δαφνόφυλλο.... Μμμ... Ατόφια Ελληνική γεύση!

ΥΛΙΚΑ
1 κιλό ρεβίθια – 1 κουτάλι σούπας μαγειρική σόδα – ¾ του κιλού ψιλοκομμένα κρεμμύδια – ¾ ποτήρι του νερού ελαιόλαδο – αλάτι – πιπέρι –νερό – λεμόνι (στο σερβίρισμα)

ΕΚΤΕΛΕΣΗ
Από βραδύς μουλιάζουμε τα ρεβύθια σε νερό. Το πρωί τους ρίχνουμε τη σόδα και τα αφήνουμε άλλη μισή ώρα να μουλιάσουν. Τα ξεπλένουμε καλά (3-4 νερά). Τα βάζουμε στη σκεπασταριά (πήλινο σκεύος για τη ρεβυθάδα) και τους προσθέτουμε το ψιλοκομμένο κρεμμύδι, το λάδι, αλατοπίπερο και το νερό. Το νερό που προσθέτουμε πρέπει γέρνοντας στο πλάι τη σκεπασταριά να φθάνει στην άκρη του χείλους της και συγχρόνως να καλύπτει τα ρεβύθια. Καλύπτουμε τη σκεπασταριά με το καπάκι της και τη βάζουμε στον ξυλόφουρνο και αφήνουμε τη ρεβυθάδα να σιγοψηθεί για 6 περίπου ώρες!

(Ορισμένες νοικοκυρές φτιάχνουν με αλεύρι και νερό ζυμαράκι και με αυτό σφραγίζουν γύρω-γύρω το καπάκι της σκεπασταριάς στην εφαρμογή του με το κυρίως σκεύος για να μην φεύγει ίχνος απο τα υγρά!)

ΣΥΜΒΟΥΛΗ
Το νερό που χρησιμοποιούμε και στο μούλιασμα και στο μαγείρεμα πρέπει να είναι μαλακό (Στη Σίφνο χρησιμοποιούν βρόχινο νερό απο τις στέρνες). Μπορείτε να φτιάξετε τη ρεβιθάδα και με εμφιαλωμένο νερό, όπως επίσης και να την σιγοψήσετε στον ηλεκτρικό φούρνο για 6 ώρες στους 150 βαθμούς.
